Could I use paprika instead of cayenne?
Yes but paprika has no heat.
There isn’t enough cayenne used to make it too hot. It only gives the sauce a little “kick”. My husband can’t do hot food and it doesn’t bother him.
One word—YUM!
I cooked this for New Year Day along with Thai jasmine rice and it was absolutely delicious. I used kosher salt because it was the only salt I had in my home. I’m looking for the cookbook so I can purchase it.
