Honey Lime Chicken Wings Recipe

I recently traveled to Yunnan and visited Xishuangbanna in the southwest of China, right on the border of Laos and Myanmar. This region is home to the Dai people, and while I was there, I visited Chonburi Restaurant. I had these incredible wings there and immediately decided to recreate this honey lime chicken wings recipe at home. If you want a foolproof finger food to round out your party spread, expand your summer menu, or upgrade your next game day gathering, this recipe is exactly what you need.

The most interesting part of this dish is how they serve it with a sugared lime slice, which is meant to be squeezed over the chicken right before eating. The bright contrast is incredibly good for summer, and before summer ends, you have to make it! I have also included other cooking methods in the ‘Other Ways To Cook’ section below so you can make them perfectly regardless of your kitchen setup.

Tips To Getting Perfect Golden Wings

Honey lime chicken wings served with sugared lime slices.
  • Pat The Meat Dry: Make sure to pat the wingettes completely dry with paper towels before you add the marinade. Getting rid of that surface moisture is the secret to getting a gorgeous golden brown color instead of steaming the chicken.
  • Why Honey Isn’t In The Marinade: Honey burns incredibly fast over high heat. Leaving it out of the initial mix makes this recipe foolproof because you won’t risk burning the outside black and bitter before the inside even has a chance to cook through.
  • Do Not Over-Marinate: Don’t let the chicken sit in the marinade for more than 30 minutes. Since there is fresh lime juice in there, the acid will start to break down the meat if left too long, making the texture mushy instead of juicy.
  • Cook In Batches: Don’t pack all the pieces into your pan or cooking basket at once. Give them some breathing room so the heat can circulate properly. If you are making a lot, it is much better to cook them in smaller rounds.

Ingredients You’ll Need

Ingredients for honey lime chicken wings.
  • Chicken wingettes
  • Fish sauce
  • Lime juice
  • Honey

See the recipe card below for all the ingredient details and exact measurements.

Pro Tip #1: Choosing The Wingettes
Grab chicken wingettes that are roughly the same size so they all finish cooking at the same time. Going with the mid-section is your best bet because you get the perfect amount of skin and meat on every single piece.

Pro Tip #2: Why Fish Sauce Beats Salt
There really is no perfect substitute for authentic fish sauce if you want that true umami depth. I highly recommend high quality brands like Red Boat or Megachef because they are less fishy and give you a much cleaner taste than other options.

Pro Tip #3: The Purpose Of Sugar
Don’t skip the white sugar. When you squeeze the fresh lime juice over the hot wings at the end, the sugar mixes right in with it to hit that perfect sweet, salty, and sour balance.

Pro Tip #4: Use Fresh Lime Juice
Squeeze actual fresh limes instead of using the bottled stuff. Bottled juice has preservatives that flatten the flavor and leave a weird aftertaste. Real limes give you that sharp citrus punch that makes everything taste incredibly fresh.

How To Make Honey Lime Chicken Wings

Paper towel on a bowl of raw chicken wingettes.

Pat the chicken wings completely dry with paper towels.

Chicken wings, black pepper, and lime juice in a bowl.

Toss them in a bowl with the fish sauce, black pepper, and lime juice. Mix well and let it marinate for 15 minutes.

Marinated chicken wings in a single layer in an air fryer basket.

Lay the wings in a single layer inside your air fryer basket. Air fry at 375°F (190°C) for 6 minutes.

Golden chicken wings in a single layer in an air fryer basket.

Flip the wings over and air fry at 375°F (190°C) for another 4 minutes. You want them nicely browned on both sides and fully cooked through.

Pro Tip: Flip them fast. Work quickly so the air fryer doesn’t lose its heat while the basket is open.

Golden chicken wings brushed with honey.

Brush the wings with honey immediately while they are still steaming hot.

A lime slice in a small bowl of white sugar.

Dip your lime slices into sugar on both sides, then shake off the excess.

Pro Tip: Dip right before serving. If you coat the lime slices too early, the juice will dissolve the granules before hitting the plate.

Place a sugared lime slice on each wing. Squeeze the lime right before you take a bite.

Other Ways To Cook

If you don’t have an air fryer here are some other ways you can cook these delicious wings!

  • Oven Baked: Preheat your oven to 400°F (200°C). Arrange the marinated wings in a single layer on a foil-lined baking sheet fitted with a wire rack. Bake for 20 to 25 minutes total, flipping them halfway through.
  • Outdoor Grill: Heat your grill to medium-high and lightly oil the grates. Place the wings in a single layer over direct heat and grill for 8 to 10 minutes total, flipping every 2 to 3 minutes to stop the fish sauce from burning.
  • Stovetop Grill Pan: Heat your grill pan over medium heat with a light wipe of oil. Lay the wings across the ridges, leaving space between them. Cook for 10 to 12 minutes total, turning them every few minutes to transfer heat evenly.
  • Pan Fried: Heat a splash of oil in a large skillet over medium heat. Place the wings in the pan, leaving space between each piece so they do not steam. Cook for 10 to 12 minutes total, turning them every few minutes so they brown evenly without scorching the marinade.

Frequently Asked Questions

Can I use chicken drummettes instead of wingettes?

Yes, but drummettes are thicker and take longer to cook. You will need to add 2 to 3 extra minutes to the air frying time to make sure they are fully cooked through.

Can I use brown sugar instead of white sugar?

Stick to white sugar for this one. White sugar has a clean sweetness that lets the lime flavor pop, and the fine granules dissolve much faster when you squeeze the juice.

How thick should I slice the limes?

Slice them thin, about 1/4-inch thick. Thin slices are easier to coat evenly in sugar and much easier for your guests to squeeze at the table.

Will the lime juice cook the chicken while marinating?

No, because the marinating time is strictly 15 minutes. This is just enough time to inject flavor without breaking down the meat fibers or making the texture mushy.

Can I make this ahead of time for a party?

You can air fry the wings ahead of time, but hold off on the honey and sugared limes. Reheat the wings for 2 to 3 minutes to crisp them back up, then brush the honey and garnish right before serving.

How do I store and reheat leftover wings?

Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat them in the air fryer at 350°F (175°C) for 4 to 5 minutes to get the skin crisp again.

How many calories per serving?

This recipe is 586 calories per serving.
