Nutella Truffles

Ingredients  

  • 2 tbsp caster sugar, or superfine sugar
  • 15 whole hazelnuts
  • 2 oz (60g) plain Chocolate
  • ½ cup Nutella®
  • 2 tablespoons single cream, or light cream
  • 1 oz (30g) hazelnuts, toasted and chopped

Instructions 

  • In a saucepan, dissolve the caster (superfine) sugar with 2 tablespoons of water to create a caramel. Once the caramel is ready, add the hazelnuts and mix thoroughly until they are well coated. Transfer the coated hazelnuts onto a sheet of baking parchment and allow them to dry.
  • In a saucepan, melt the plain chocolate cut into pieces along with the cream and NUTELLA®. Mix thoroughly until well combined. Once melted, remove from heat and let it cool.
  • Use a teaspoon to scoop a nut-sized piece of the chocolate mixture. Place a caramel-coated hazelnut in the center and roll it in the palm of your hand to form a small ball. Repeat until all the mixture is used. Roll the balls in the toasted, chopped hazelnuts. Refrigerate for 30 minutes before serving.

    Can you leave out the cream or add a substitute. I have a friend who is dairy intolerant so I thought I could use coconut cream or none at all
